Kojic acid, chemical name: 5¨Dhydroxy¨D2?-hydroxymethyl¨D4¨Dpyrone; molecular weight: 142.1; appearance: colourless primatic crystal, melting point 152-155, easily dissolvable in water, alcohol and acetone, slightly dissolvable in ether, hexyl acetate, chloroform and pyridine, non-dissolvable in benzene; toxicity: LD502500-3500mg/Kg.

Kojic acid can be used in several areas, such as cosmetics, food additives, pharmaceuticals etc. Because kojic acid and it's derivatives can safely suppress the growth of human skin melanin, it is becoming more widely used in skin whitening cosmetics, bath lotions toothpaste etc. Kojic acid is also antibacterial, prevents oxidization and preserves color; therefore leading to use in food preservatives, oil antioxidants, preventing fruit and vegetables from becoming stale, and preserving the color of meat and aquatic products.
